We’re excited to share our first Costa Rican offerings of the year with you all. They each are a departure from our current lineup of washed coffees, boasting interesting processing techniques and bold fruit flavors. Costa Rica’s reputation precedes itself in the specialty coffee industry. This origin is renowned for the quality of its coffees, due to the favorable growing conditions and distinctive flavors imparted through terroir. The Corazon de Jesus is no slouch.

This coffee was produced in the Brunca Region of Costa Rica, by the Alvarado Fonesca Family. Brunca is the country’s youngest growing region, located in the southern part of Costa Rica. Its position is flanked by Panama to the east, the Cordillera de Talamanca mountains to the north, and the Pacific Ocean both south and west. The Alvarado Fonesca family established their business in 2015, with quality and innovation set as cornerstones for their operations. They’ve earned countless accolades and an elevated reputation with impressive Cup of Excellence standings, and space on coffee competition stages. The Corazon de Jesus is proof the family is an established high quality producer. This coffee is composed of Villa Sarchi, a natural mutation of the bourbon varietal that was processed through a proprietary technique - the Reposado Natural Process. This method moves the coffee through an alternating series of fermentation and drying stages. It begins with ripe cherries initially fermenting in bags for a few days, and then they are moved to raised beds for the first round of slow drying. After the pulp has sufficiently dehydrated, they ferment the cherries a second time in bags for around a week, before ultimately moving them back onto raised beds for definitive drying. The resulting cup honors and displays the fruits of this unique processing method. 

In the cup you will first be struck by the aroma of the dry grounds, and subsequently, the brewed coffee. It is deeply fragrant, offering a tropical and boozy nose. The fragrance mirrors the taste experience, bursting with yellow tropical fruit, dried red fruits, and complex savory undertones. The end result has a likeness to a summer tiki drink - an explosion of fruit and funk, rounded out with a medium body.
